Herb-Lemon Baked Tilapia
Preparation & Seasoning:
Thaw the whole tilapia (6-12 hours in the fridge or 30-60 minutesunder running water), then descale, remove gills and innards, andrinse thoroughly. Pat dry with a paper towel and make a few shallowcuts on both sides. Rub the fish evenly with olive oil, salt, and blackpepper, then stuff the cavity with lemon slices, garlic slices, and freshherbs (such as rosemary or thyme).
Baking & Serving:
Preheat the oven to 200'c (392°F), place the fish on a baking tray, andbake for 25-30 minutes until the skin turns golden and the flesh isfully cooked (increase to 220'C (428°F) in the last 5 minutes forcrispier skin).Squeeze fresh lemon juice over the fish before servingPair with roasted vegetables or a fresh salad for a complete meal.
